Can these run on the same Linux server?

yep, just there will be a conflict with the daemon (OS agent receiver), both tools use default port 8162, one of them must be started on different port if you want to keep both running.
If you want to keep running just Xormon one then just stop lpar2rrd daemon

Can I change ports when I install or do I need to do it after the fact? I need to have both running ..

If I change to port for lpar2rrd to a different port in the lpar2rrd.cfg file, will that fix the conflict?

sure, 2 different processes cannot listen on same port, it is against how things work in whatever operating system
